    I remember my first time trying pork loin. My wife's family had it every new year's day. It was grey, tough as leather, and dry as a bone. My mother in law boiled it for 3-4 hours. Funny thing is, everyone in my wife's family liked it since that's what they had eaten all their life.

    I used to overcook pork. I was always told that pork had to be cooked to over 160 degrees to kill any parasites that could make you sick. But the first time I cooked a pork loin to 145, it was a game changer. Completely different experience. Moist, tender, and delicious!

    Yep....Kind of like how my wife never liked steaks until I made dinner for her when we were dating.
