Got a butt on the smoker, went on at 8:30 for a party at 5. Won’t get to smoke as long as I like to, but I’m hoping it’ll turn out ok. I usually do overnight smokes for briskets and butts.
Thank god. With enough barbecue sauce anything can be goodIt will be good.
Pork butt is forgiving and very flexible!

did a 15 lb turkey
24 hour brine of kosher salt, brown sugar, and apple juice
smoked it for 13 hours with apple wood chips
the boss has sampled and given approval
