    And the finished products?
    Unfortunately, my family came swooping in like a wild pack of hyenas and devoured them before I was able to capture the photo evidence of my masterpiece. It appears that I shall have to make more so that I may be able to correct this great wrong.

    BTW, they were amazing. Not quite falling apart, but came clean off the bone. I did get this pic about 4 hours into the cook. Total time was 5.5 hours. No wrap.

    Rib tips and a small shoulder, about 4 hours on the shoulder right after I put the tips on. Everything turned out aok. First time doing tips, so I was pretty pleased.

    Made a few smoked chicken quesadilla for dinner last night. Toasted the tortillas for a couple minutes on the Bullseye at 425, turned it down to 325. Spread a mixture of smoked, pulled chicken, cheese, green chilis, and taco seasoning on them. Topped mine with a few black olives. Grilled about 4 minutes per side until filling was hot. Didn't suck at all...

    Been awhile since I've used the pellet grill , so I fired it up and made some bbq meatballs and peppers.

    Planning a whole packer this weekend.

    Thinking about just doing a simple central Texas rub.....Course Kosher salt and cracked black pepper.

    Have not tried this rub before....Have any of you? What are your thoughts?

    Made chimichurri spiced big hamburger steaks for lunch, just for something different. Now I need to do some smokey tangy sauced chicken.
