I like my Bradley. Its electric and electronic controlled like an oven. No work involved. Set and forget except for meat handling.

If I ran mine in the garage my wife would kill me for making the garage and probably our bedroom smell like meat smoke. Not that its a bad thing... LOL

I do have plans for building a little smokehouse to go around it if I buy another one. This one has some age and was just rebult, so I'll wait a couple years for if/when I buy another.

    Pork Belly Cinnamon Roll

It’s no secret, pork belly burnt ends are one of the best bites in barbecue, so I decided to combine my favorite dessert with them.
The results are pork belly cinnamon rolls. A sweet and savoury treat that everyone will love.

    The recipe is easy:
Butterfly open a slab of pork belly (increase surface area)
Mix 1 cup of brown sugar and 1tbs of Cinnamon together
Season your pork belly with the sugar mixture and a little bit of salt to balance
Roll the pork into a cylinder and tie together tightly
Cut the pork belly in between the string and cover in more seasonings
Smoke at 250°F for 4-5 hours
Melt butter, brown sugar, and maple syrup together and cover your pork
    Continue for another hour

This recipe is basically pork belly burnt ends just with a different method and seasonings.

I've often wondered how oak barrel staves might do for smoking brisket.....guessing pretty damn well.
The smoke from oak is slightly bitter compared to hickory, but the aroma from the bourbon is simply unreal.

I think the lack of asmoke ring may be from the length of time it spent wrapped

Did you smoke it until the meat got past 140⁰?

Just dropped a flank steak in the Traeger. I'm going to see if a few hours of smoke and time will improve the experience.

Anyone smoked a flank steak before?
