    The point is tough because you cut with the grain. Cube it, throw it on the smoker or even grill for a bit, lightly sauce it, and thank me later

    Was gonna do some ribeye filets and jumbo shrimp tonight but the skies are telling me different
    Same. Glad I put the ribs back in the freezer this AM and got out the hamburger. I run a Bradley, so its no good in wet weather. And I dont smoke enough to build a little mini shelter for it. We had severe storms roll through here in the middle of what would have been my smoking time.

    I recently got a cast iron griddle top for my grill and have discovered smash burgers. :drool:

    I'll be firing the grill up shortly since we all had a late lunch.

    I’m calling this success!

    Point is almost falling apart, but juicy tedender and delicious.

    Flat is a bit on the tougher side but still tender.
    I think next time I will start it a little lower and early. It seemed to hit 160 very fast.

    Most importantly, both point and flat are yummy and I learned a lot!

    IMG_20230625_172303474.jpg success. here's one of the two racks I made today. Turned out better this time last time was a bit too tender. Tossed some frozen rallys fries in the air fryer and dusted them with some sweet preacher and smoked an onion for my wife and had a nice simple summer dinner. Got some chocolate chip cookies in the smoker now.

    Weber Smokey Mountain runs rain, shine, sleet, snow, and without utilities.
