    No pictures, I failed.

    Olive oil, salt, pepper and lemmon juice marinade.

    Kamado joe to 350⁰, heat deflector on one half, direct heat on other half.

    Started the fish over the heat deflected side till they reached 100⁰ internal, finished them at 140⁰ over direct heat.

    Good enough to say we'll do it again.
    Nice.

    Try pulling them at 130° next time. I think it makes a pretty big difference.

    I need a new grill this year. Hoping for a good fathers day sale deal.

    Already replaced the burners, heat shields, and had to patch the bottom with sheet metal. Now my heavy cast iron grates have sections that are rusting/swelling/flaking at the outside ends and they are making their way inward. I need at LEAST new grates and new shields. But probably time to retire it for a new one.
