    I’m looking for a book that has information on old world food preservation. Storing through winter, canning, salt curing, jerking, pemmican, etc…

    Any good recommendations? Paperback, no ereader stuff please.

    I think we have a copy of an older Ball manual, but the above looks like the best recommendation. Almost certainly the same stuff..canning is a pretty mature science.

    I highly recommend the Meat Smoking and Smokehouse design that natdscott has linked above. You will LEARN the art from this book.

    Also, I haven't had much luck finding all information in one book. Sometimes for one step projects (jerking, pemmican, etc.) I just find instructions on the web.
