    3 pork shoulders went on the smoker at 6pm last night after having the rub on for 24 hours. I ran them at 180 until I went to bed, then bumped it to 200 when I went to bed. When I checked it at 2am, I raised it to 225.

    Hit 205 internal at 7:30am, now they are wrapped in foil waiting to be pulled in about 45 minutes.

    These are for my son and future-daughter-in-law's wedding shower today.

    Made some chicken thighs, garlic and herb potatoes, and sweet corn on the kamado last night. This was my first try at chicken thighs. They were good, but there’s a few things I need to work on.
    Thighs are my favorite part of the chicken to cook with. They’ve got better flavor and are much more forgiving than the other parts of the chicken so you can get away with them getting a little over done without them drying out.

    I tried the Royal Oak charcoal pellets this weekend for a couple of simple cooks. They run fine and work well for grilling, but I think regular wood pellets would be better for low and slow.

    For grilling, though

    568 in the chamber equates to 700+ on the grate.

    Picking up a new grill saturday. My old one has been faithful for 19 yrs but time for a upgrade. Won't be kicking the old one to the curb she's still a good one but...
    Bought this one at bailey's discount center but couldn't get it in the vehicle we were in. It's honestly almost too big but they were out of the smaller ones and only had a couple of this one. And no I didn't pay what it says on the wallyworld page, right about 1/3rd. Now to build a stand/table for it.
