Title says it all, I’m curious what unique .22 guns are out there. I have a GSG STG-44 and love it, and I’d like more interesting .22 style guns just to enjoy shooting.

Winchester 1903's would qualify. Good looking Winchester design but made while .22 shells were still black powder. Winchester's answer was to make a proprietary .22 auto round in smokeless. A butt rash now, but unique...
There is a a whole slew of Military arms that had been converted to shoot 22s for training. 9 times out of 10 they are tired worn out rifles, that are giving a whole new lease on life by being converted to 22. But there are some are are made to be 22s from the start.

Enfield mk 7

And as if you find Enfields not your cup of tea
there are Lebel French 22 rifles.

Then there are Mauser conversions from inserts

to Mauser rifles made from scratch to be 22s.

And the nice thing is lots of these rifles are converted in small batches and everyone did it.. So its like the Wild West of gun shooting.. Lots of surprises are out there.
For fun you can take what looks to be a large bore military rifle that has been converted to 22. Load it up hand it to the friend to shoot it. And then when it makes a phoof 22 sound over a large caliber bang you can look at you friend all puppied eyed and say "What did you do to my gun"???
Also if you just want old world class 22 shooting start collecting Quackenbush's..
As your victim in this, I do have to admit it was funny...
Speaking of military-looking rifles chambered in .22, this is a Polish WZ-48,
Well this time I think a french rifle has them all beat. MAS 45
It has some quirks that gave it a deservedly bad name, but it runs great if you reassemble it correctly and is a ton of fun to shoot.
Bull-pup Walther G22
The "Winder Musket" is a fine shooter.
