    I've always used 1 table spoon of ground flax seed and 2 tablespoons of water as a substitute for eggs in baking.

    I like my eggs. Even when they are dry. No way is a plant going to taste like an egg with out a bunch of other questionable stuff add to it. Just my feelings.

    Scrambled eggs are almost tasteless anyways, you only taste the salt, pepper, hot sauce, and whatever else you put on them. I bet these plant based scrambled eggs will taste just fine. The other applications are for baking, so it's not like you taste a difference in those. Interesting stuff. I like my eggs sunny side up, or fried, so these are not really an option for me outside of baking.
