    Anybody use jealous devil xl briquettes in a snake pattern for cooking a brisket? I need to cook one this week
    Cannot say I am familiar with them.

    Seems it may depend more on what type of smoker you are running, but as I said...I'm not familiar with them.

    All I know is when it comes to smoking a packer, low, slow and even are your friends....as are time and patience.

    Looking forward to hearing how it goes!

    Bailey's Discount in North Judson have some Pit Boss pellet grills if anyone is looking. 1000 and 700 size, seems like a good deal especially the 1000.

    We did the 2 hr drive each way, today for the 700.
    It was about the longest 220 miles ive driven in my life. We went past Bum **** 3 or 4 times.
    Thing two put it together when we got back to the house.
    Tomorrow afternoon after the first burn we are gonna run a few racks of babybacks.

    We did the 2 hr drive each way, today for the 700.
    It was about the longest 220 miles ive driven in my life. We went past Bum **** 3 or 4 times.
    Thing two put it together when we got back to the house.
    Tomorrow afternoon after the first burn we are gonna run a few racks of babybacks.

    Its an interesting store for sure, I almost bought a dent refridge for my shop.
    I was nervous with them being a few hours away, if I had a problem with it.
    I'm sure I will stop in again when im up north next time.

    How long are you guys smoking flat brisket for at what temperature?

    I was going to try for 225⁰
    Obviously weight comes into play but I've found allotting 2hrs per pound works well. I do brisket at 250° however. The 2hr per lb includes a 1 hour rest in a cooler too

    I don't know weight just yet but I have a 15.71Lbs(pre trimmed and seasoned) brisket that I was going to cut the point off of and divide the flat into two pieces. Maybe 4-6 pounds?

    Did a flat Sunday. Was 4.25# and total time was right at 8 hours, including rest. Every piece of meat is different and different fat contents will require different cook times too.

    When it comes to smoking I always try to give myself a couple extra hours from when we'd normally eat just in case. If goes according to plan we eat early...lol

    Yep....next decision is if I should go the snake method or pile on the side, both option with a water tray.

    I didn't have any luck finding B&B charcoal...well not entirely true....nowhere local and told I'm at the budget limit for bbqing for this pay period. So either jealous devil XL briquettes or lump charcoal(cowboy brand or another brand I don't recall from the bbq place in beech grove).

    Thing 2 fired it up today and burned the oil out of it and then turned it down to 200°
    We tossed a rack of seasoned Baby Backs on it and let her go for 3 hrs negid and a hour in foil. I will say im sold just on how easy it was and if I didnt open the door to peek it kept damn good temp + or - 5° the whole time unless I lookie loo'ed to long.
