The meat is done. Brisket rub is salty with bite. This was a Kroger brisket and I'll have a Sam's or Gordon F/S one next year. Lot more fat on this one than previous ones. Had to trim more than I thought I should. Birds are enjoying the beef suet though. Tasty and I hope everyone enjoys some.
