Suppose you could sign up with a hosting provider and roll your own with your own domain. There are some hosting providers not in the US that have way stricter privacy laws to abide by (for example ionos/1&1 is based in Germany if I recall correctly) about $100ish per year depending on the plan.

I believe if there is some one or some organization that wants to read your email, nothing will be able to stop them.
