For myself, I have found that if I even eat the low end of their spectrum I will gain weight. For reference, I work out 4-5 times per week and have a large athletic build. Unless I'm just extremely abnormal :dunno:, I can't eat pasta and bread every day without it showing. Just my experience.
I am in the EXACT same situation as yourself. I'm not fat by any means and I CrossFit 5 days a week, but I needed to lean out. I cut the processed carbs and sweets out last week and a dropped 5-6 lbs in a few days and I feel great. All those carbs make you feel bad and still wanting more. Our bodies (genes) do not know what to do with this stuff but store it. Million years or so of being a hunter/gatherer...10k years of agriculture, a few generations of "processed food"...our genes have not adapted to the "recent" change in diet. They are still geared towards hunter/gatherer, regardless of what the food industry SAYS is good for you. Beware ALL foods that say "healthy" on the package. Likely not.

To go a bit further, I was speaking with a local farmer recently who was lamenting the cost of seed, specifically for corn. He opened my eyes to the legal monopoly of Monsanto and how they are screwing over the farmer with the backing of the US government.

He could have bought other seed. Plenty of cheap seed out there.
Just be prepared for him to complain about low yeilds and how he will have to work his fields more.
Monsanto complainers love their great products but think like socialist and want everthing for free.

He would have complained about Henry ford and the model T too!
