Stripping bark from some apple wood kept from some trees I cut down a couple years ago.

My initial thought was that you were getting that chicken ready for tomorrow...

Smoked meat loaf- 2.5# ground chuck, 1.5# ground pork, onions, garlic, peppers, sweet rub (in the mix and on the outside) and crumbled pork rinds instead of bread crumbs, 2 eggs. will take about 3 hours. It gets a glaze for the 1/2 hour.

My first attempt at red beans and rice that didn't come from a box. Turned out pretty good. Dried red beans, kielbasa, water and salt. 12 hours on low in the slow cooker. Served over Minute Rice.

New York strips on the Weber tomorrow.

My adult daughter has really gotten into smoking/grilling. This is a bone-in ribeye she made recently. Her recipe started by rubbing a pound of garlic butter over the roast.

Hit temp right around 4.



Ribs took around 6.

Put them on at 8pm, 225F. Woke at 7:15am and it was 198F. Did my morning routine and it was 204. Off the grill and into my cooler.

Love the pellet grill.

Steak and potatoes on the flattop the other night. Didn't get a picture of it plated.


Not going to be grilled or smoked, but this will be dinner on Thursday after a week of brining. First attempt at homemade corned beef.

I have some pork cushions (15lbs) that have been given to me so they will be on the smoker tomorrow. Anyone have some input? My thoughts are to treat it like pork butt, the package says five count so I'm kinda wanting to try and experiment a little with some of them maybe try a marinade. Thoughts??

I thought the pork cushion was just a deboned picnic?

That's my understanding, I have never done anything with a picnic.

I've never done cushions, but I would think it would behave like a shoulder. The picnic is part of the shoulder. Leaner than a butt, because it will be deboned and trimmed I would assume.
