I marinate tuna filets in soy, ginger, a little olive oil, and brown sugar. Grill on med/hot grill for 3-4 minutes depending on how thick the fish is. It is best to me if it is rare to med rare.

    mix together

    1/4 cup of water
    2 tablespoons of unsalted butter
    2 tablespoons of tequila
    2 tablespoons of lime juice
    1 tablespoon of sugar
1 teaspoon of chicken bouillon granules(I get them from ramen noodles)
    1 teaspoon of ground coriander
1 teaspoon of crushed red pepper
    1 teaspoon of kosher salt
    1/2 teaspoon of black pepper

put in a sauce pan and heat until the butter melts and everything is mixed. let it cool down and pour on the tuna in a baking dish or plastic bag, let it sit for half hour to an hour. throw in on the grill 5-7 minutes per side for medium rare and enjoy.
