Fox 59 has been reporting on a man shot in the neck with a 7 mm pellet. They showed an x-ray and, by my estimation, it's a .177 caliber. Are 7 mm air gun pellets even a thing?

No they are not. Fox 59 is mistaken. Even a .22 pellet is only 5.5 mm.

The chinese make a 9mm pellet rifle for hunting. I think the brand name is something like "career" Never heard of a 7mm pellet rifle.
