    Bought a grill plate for my air fryer and tried it tonight with a sirloin steak. I used a temp sensor and cooked it to 140 degrees internally. Turned out pretty good but not as good as a grill or pan fry but easy to do.

    I have a Treager (good deal at Costco includes internal temp sensor and Wi-Fi) and a regular cheap 4 burner gas grill.

    8 hour smoke on this chuck roast. Going to chunk it up for chili tomorrow.

    Also smoked a tri tip, brisket style, and a 12lb pork butt.

    The wife marinated some chicken for chipotle bowls that I grilled. She had some left over chilies in adobo sauce from that marinade so she added them to chili. DAMN, that's some HOT chili.

    So a customer ordered fresh side bacon and ham….. multiple years ago I have been storing it feeling bad but she won’t respond not sure what the deal is. Anyhow decided it’s time to try it out.

    Threw it out on the smoker yesterday a steak and the sliced bacon. Overcooked it all and neither ended up like if they had been smoked and soaked in nitrates. Both edible…… but not good ham steaks are about 1/2” thick bacon is thick cut. Any ideas / recipes you guys have had success with.
