So we suddenly drop from 97% counted to 94%, and as the clock ticks we find that suddenly that 3% of the uncounted votes are almost all democrat votes.

If this was reality, the missing ballots would continue to trend more or less with the prevailing votes. Or at least somewhat balanced. NOT majority one party or another. Statistically speaking, I wouldnt expect these "missing" votes to change the outcome.
