I have an idea to make a custom canvas cap for the bed of my truck. Does anyone know a place that would be able to work with me and sew the canvas?

Basically, I am wanting to build a headache rack. I would then make two more frames to match. These other frames would go in the center and rear to support the canvas, giving me an enclosed bed to cover all of my stuff when I need to get out of dodge. I can make the frames, I just don't have the ability to properly measure and sew canvas.

Around here, the Amish commonly work on canvas. They make custom tarps and buggy covers. I suggest drawing up what you need and looking for a community of Amish.

Whether you're looking for garden plants, butchers, clothing or tarp makers... Amish communities are often a one-stop-shop at reasonable prices. Any small business working on canvas probably has specific contracts that keep them in business and therefor their shop-rate is pretty steep.
