    Yep. While beans start oxidizing right away after roasting and getting stale, they oxidize way faster after being ground. My understanding is that beans are the best after around a week from roasting, as they have to degass or something for 5 days or so. After that they are the freshest within 3 weeks or so (a month from the roasting date). Even after that coffee will taste better being fresh ground from bean, even if they're stale.
