I had a ‘79 base with a 350, 4-speed and a limited slip.

Not a screamer, but with a mild cam, and some headers, it was fun.

Yes. Ford produced a series of Shelby Mustangs specifically for Hertz.

I don't recall a convertible, but I am no expert.

The folklore included stories of guys renting them for the weekend and then swapping out the engine for Plain Jane engine from their own Mustangs. Don't know if there is any truth to it, but I could imagine somebody tried it somewhere.
