    Anyone can peppers straight up and have any tips? Looking to fire roast them on the smoker to soften the skins then can.

    I mostly dehydrate peppers. Not canning them, but have lacto-fermented jalapenos with success last year. Hopefully have enough yield to do more this year. Lacto-ferments are not shelf stable, they need refrigeration after the initial fermentation process.

    I do gallons of lacto-fermented dill pickles every year along with various cabbage and onion ferments. The lacto-fermentation process does not use heat, thus nutrients are not cooked off.

    Canning them will definitely soften the skin, if that is the only reason for roasting them it’s not needed. It will change the flavor.

    Tip: Mrs. Wages pickle seasoning works great if you just want pickled peppers.

    Leave some green beans whole pack them in pints add a few jalapeños use Mrs. Wages, just eat them out of the jar, it great.

    To answer the question, yes we can jalapeño peppers straight up. Who doesn’t? Good luck, enjoy.

    We’re doing another batch of maters tomorrow, salsa will have to wait a while, I’m not running out of mater juice again.

    Again Mrs. Wages salsa seasoning is absolutely the bomb.

    I have gotten away from the sugar these days, but in years past, pickled a lot of jalapenos and Hungarian peppers with Mrs Wages bread and butter mix.

    Picked a large heaping bowl of sweet peppers this morning. Smoked and skinned. Got 6 pints in cool down mode now in the canner. First run was good for sizing information. Now I know about how many jars I can fill with the next picking. May try bell peppers this weekend.

    Everything I have read says they will last up to 18 months. Is that everyone’s take on life on the shelf?

    They don’t (sweet peppers) last that long. Wife cuts them in half fills with sausage stuffing and freeze’s them. They go pretty quick with some marinara sauce n cheese, rice side dish.
