I use a large fillet knife to cut up deer boneless. For making jerky just slice some thin slices while cutting meat or when partially frozen(can be from partially thaw frozen meat,slices nice).

Rather just stay on EST. Early morning riser here, don't like driving to work when it's dark in the mornings. Still had plenty of time in evenings to get work done. Going to bed when still light out not natural when accustomed to std time for many.many years before dst. Like to see/hear nature...
